Étape 1

Prepare the ingredients

Slice the onion into thin strips. Rinse the choucroute if it's overly sour and drain it well. Cut the smoked bacon into medium-sized pieces. Peel the potatoes and keep them whole.

Start cooking the choucroute

In a large pot, sauté the sliced onion with the pieces of smoked bacon until the onion is translucent. Add the choucroute, mixing gently to combine the flavors. Pour in the white wine with the bay leaves and juniper berries. Season lightly with salt and pepper.

Simmer the ingredients

Cover the pot and let it simmer on low heat for about 1 hour. Stir occasionally to ensure the flavors meld together beautifully.

Cook the potatoes

Add the whole potatoes to the pot around the 30-minute mark, allowing them to cook along with the choucroute.

Add the sausages

When the cooking time is nearly finished, add the Strasbourg sausages on top of the choucroute and let them heat through for an additional 10 minutes.

Serve the choucroute

Remove the bay leaves before serving. Place a portion of choucroute on each plate, accompanied by a potato, some smoked bacon, and a sausage. Serve with mustard on the side if desired.
