Sauce Arrabbiata
A spicy and flavorful Italian sauce perfect for pasta lovers.

Prepare Garlic and Oil
Thinly slice the garlic cloves. In a large pan, heat the olive oil over medium heat. Add the garlic and sauté until fragrant and lightly golden, about 1 minute. Be careful not to burn the garlic.

Cook the Tomatoes
Add the canned tomatoes to the pan, breaking them up with a spoon if whole. Stir in the cayenne pepper and a little salt. Let the sauce simmer on medium heat, stirring occasionally, for about 15 to 20 minutes. If the sauce seems too acidic, stir in the optional sugar.

Towards the end of cooking, taste the sauce. Add a few drops of Tabasco sauce to enhance spiciness if desired. Adjust salt to taste.

While the sauce is simmering, cook the pasta according to package instructions until al dente. Reserve some pasta water, then drain the pasta.

Combine Pasta and Sauce
Add the cooked pasta directly to the sauce in the pan. If the sauce is too thick, add a splash of reserved pasta water to achieve the desired consistency. Toss to combine well.
